Ingredients

    4 chicken breasts, halved
    1/2 cup flour
    salt and pepper to taste
    2 tablespoons butter
    2 tablespoons extra-light olive oil
    1 1/2 cups orange juice
    2 tablespoons vinegar
    2 tablespoons brown sugar
    1 teaspoon basil
    1/2 teaspoon nutmeg
    1 can (16 oz.) peach halves, drained

Directions

Shake chicken pieces in bag with flour and salt and pepper to taste; brown in butter and oil. Place browned chicken in a greased 3-quart casserole dish. Combine orange juice with vinegar, brown sugar, basil and nutmeg, and pour over chicken. Cover and bake at 375 degrees for 1 hour and 15 minutes or until tender. Baste often. Then place peach halves between chicken pieces, baste well, and bake uncovered for 15 minutes longer. Serves 8.

    I've made this twice now and really enjoyed it. The kids loved it which is a huge plus. I wonder if anyone has tried making it in the crockpot instead of the hot oven. BTW, I shredded the chicken and let it really soak up the cooking sauce before serving over rice. Yum. - 8/29/08

    That's a good idea about trying it in the crock pot. I don't see why it wouldn't work. Let me know if you try it!

    I've seen this recipe, too... not sure where it came from either, but I'm glad you posted it! I made it over a year ago, but lost the recipe. It is very moist, and has an awesome flavor! I leave out the nutmeg, though... First time I made it, it seemed overpowering. Thanks for posting this! - 8/2/08

    I have to admit that I had my doubts about this one. However, I decided to give it a try. I was quite pleasantly surprised. It was tasty, moise, and flavorful. I even enjoyed eating the baked peach halves. - 2/2/09

    Hi I used to do this one from a Canadian cookbook in the 70s. Bet your Mom is my age. Enjoy it while you can. It was one of my favorites until I couldn't make all the substitutions I would need to. - 1/14/09

    I did this in the crock pot and it was a big hit. Six hours on low. Next time I will follow the recipe exactly but last night I left out the basil and nutmeg and added a mix of chopped peppers and onions. Really fantastic! - 12/21/08

    This was very good! I used peach slices because I didn't have peach havles on hand. I also added a little cinnamon to the orange juice/vinger/brown sugar mix. It really came out nice! Another one for the keep pile! - 8/18/08

    Oh wow, I loved this! It was super easy and the chicken was perfectly cooked. I made it as-is and did not think the nutmeg was overpowering. I also poured in the syrup from the peaches can. We ate this over brown rice. I will make again and again! - 8/11/08

    Yummy & looks pretty -was very good over rice. My 2 & 3 1/2 year old daughters only ate the peaches - I think the basil & nutmeg might have been too strong for them. This will be an "every once in a while" meal b/c of the prep time. Thanks for a new yummy & healthy recipe! - 3/16/09

    I am wondering if I could substitute raw, fresh peaches for the canned? I am not a big fan of processed foods and try to avoid using them in recipes whener possible. Has anyone tried this method? - 8/13/08
