Introduction

This is a quiche similar to what I always make, only it has rice on the bottom. This is a quiche similar to what I always make, only it has rice on the bottom.
Number of Servings: 6

Ingredients

    2 1/2 cups cooked brown rice
    12 fl oz can Evaporated Milk
    6 oz can Chunk Ham water added
    4 oz can mushrooms with stems and pieces (drained)
    1/2 cup frozen spinach...microwaved and drained
    3 eggs
    2 oz shredded mozzarella
    2 oz shredded cheddar
    1 tablespoon self rising flour
    onion powder and seasoning salt (1/2 tsp each)

Directions

Press cooked rice into quice dish. Bake at 450 for 5 minutes.

Then..Mix spinach, canned ham, canned mushrooms, and cheese. Sprinkle over rice

Mix can of milk, flour, salt, onion powder, and 3 eggs in a bowl. Pour mixture over the ham and cheese. Bake in the oven...Turn it down to 350 for 45 minutes. This makes 6 big servings.

    Wow - this is great. I found the portions too big so I made 8 portions out of the recipe. I also added a bit of low cal margarine and Parmesan cheese to the rice. It was so good. I wanted leftovers for lunch tomorrow but there are none! - 9/11/08
