Number of Servings: 12

Ingredients

    * Zucchini, 1 cup, shreeded
    * applesauce, 0.25 cup
    * whole-wheat flour, 0.75 cup
    * Egg, fresh, 1 large
    * Cinnamon, ground, 1.5 tsp
    * Nutmeg, ground, 0.25 tsp
    * Lemon Peel, .25 tsp
    * Granulated Sugar, .25 cup
    * Brown Sugar, 0.33 cup, packed
    * all-purpose flour, 0.75 cup
    * Baking Powder, .25 tsp
    * Baking Soda, .5 tsp

Directions

Preheat oven to 350 and grease a loaf pan.

Mix together dry ingredients, then add wet ingredients.

Pour into loaf pan and bake for 55 minutes.

Cut loaf into 12 equal slices and enjoy warm or chilled.

    this was very good except i put a cup of carrots @ a cup of rasins @ a cup of chopped nuts to it . that made it a very holsome breakfast with a cuo of tea with a twist of lemon@ a teaspoon o

    I replaced all the flour with whole wheat flour and the sugar with Whey Low (a natural sugar substitute). I also added a cup of shredded carrots and half a cup of walnuts. This was a good recipe that I will make again. Very moist. - 6/23/10

    Yum, this is a good one. I have lots of zuc's, this will put them to good use. My four kids love it too. I add a few chocolate chips in their loafs.....who doesnt love chocolate with their veggies!!!! - 9/14/09

    Altered this slightly with splenda brown-sugar blend instead of brown sugar and splenda (white) instead of sugar. May explain why this bread hardly rose. Also, had to add more apple sauce; the batter was quite dry! Quite delicious, but does have a slight after taste. But it's probably less calories! - 6/21/09
