Ingredients

Low-Fat Graham Crackers
8 oz. fat free cream cheese (softened)
1 cup cold skim milk
2 Tblsp. lemon juice
1 small box instant vanilla pudding (sugar free)
8 oz. fat free Cool Whip
1 can lite cherry pie filling (or any flavor)
Directions
Line the bottom of a 9 x 13 pan with whole graham crackers. Beat the cream cheese until smooth. Add milk and lemon juice to the cream cheese and beat until smooth. Stir in pudding mix, then fold in Cool Whip.
Spread 1/2 of cream cheese mixture over graham crackers. Repeat with another layer of graham crackers and cream cheese mixture. Spread pie filling over top.
Refrigerate overnight for graham crackers to soften. Enjoy :)

This is great! I made individual servings in a muffin pan...15 in all. I lined the muffin tins with the aluminum type of liners...instead of graham crackers I put one lowfat nilla wafer in the bottom of each liner...topped with the cheesycake mixture & then topped with chopped fresh strawberries! - 5/4/09

OH MY DEAR SWEET LORD !!!.....I made this with cottage cheese instead of cream cheese.(the beating smoothed out the lumps) Fool me once....fool me twice....fool me over and over again with this recipe !

I made this, but being the only person in my house wanted it to last so I didn't add any fruit topping and stuck it in my freezer. I cut a serving out and top it with fresh strawberries or frozen blueberries and it's wonderful plus I enjoy it more because it's frozen I can't just scaft it down!! - 1/14/09

This was awesome! I used sugar free fat free jello cheesecake pudding instead of vanilla, and covered the top with fresh red raspberries. This is a fantastic recipe, I made it with blueberry filling! I did notice that only 16tbsp of cool whip was used to calculate the nut. info. Normally that would be correct, but for cool whip free 1, 8oz tub has about 50 tbsp (25, 2tbsp servings). Not trying to be mean, just thought you should know. - 10/8/08

This was delicious! I made it exactly as it was written, no substitutions. The only thing I would change is the pie filling though, I didn't like the sugar free pie filling. It had a strange aftertaste. I will top it with some fresh fruit next time. Oh, and I calculated the cals at 100, not 80. - 7/15/09

I made these. I substituted low fat vanilla wafers for graham crackers and made them in individual muffin tins. I used sugar free and fat free vanilla instant pudding and they came out real good. Just make sure to cream the cream cheese real good otherwise it can be lumpy. I will make again! - 8/22/09

I made this four our 4th of July party. Lots of good reviews! It doesn't taste lo cal at all! I made a mulberry topping for it and used the low cal cherry pie filling, put each topping in dishes and let the guests decide how to top it. This one I will make again for sure! This proved to be an excellent recipe! I used 1/3 less fat cream cheese, 1% milk, and lite cool whip instead, plus Wyman's canned blueberries (in water), rinsed and drained, for the topping. Love the versatility. I agree on not layering the graham crackers. I prefer more cheesy cake flavor. The white chocolate pudding flavor was a little bland, and I added a 1/2 t of vanilla. I cut back the lemon juice to 1 T, but will try 2 next time. Fresh raspberries were the perfect topping! - 11/9/09
