Ingredients

    4 (4-ounce) boneless pork chops, 3/4-inch thick

    2 teaspoons curry powder

    1/4 teaspoon seasoned salt

    2 teaspoons vegetable oil

    4 sliced green onions

    1/4 cup raisins

    1/3 cup chicken broth

    1 teaspoon cornstarch

    1 fresh mango, peeled and diced

    2 tablespoons flaked coconut


Tips

Serve with hot cooked rice or warm corn tortillas.


Directions

Season chops with curry powder and seasoned salt. Heat oil in large skillet over medium-high heat. Brown chops on both sides, turning once, for a total of 7-8 minutes. Remove chops from pan, reserve. In small bowl stir cornstarch well into chicken broth. Add onions, raisins, and chicken broth mixture into skillet; cook and stir until slightly thickened. Return chops to pan; heat through. Serve chops garnished with mango and coconut.

Makes 4 servings (3 oz cooked pork per serving.)

    My husband told me I HAVE to make this again. I did add some red pepper flakes to give more heat, which was wonderful. Next time I'll double the broth/cornstarch too. - 9/10/07

    Fantastic! I added 1 tsp each of minced garlic and ginger with the broth and raisins, and also added the mango and coconut in with the sauce and chops and heated through. Wow! Wonderful over basmati rice with some plain yogurt or sour cream on the side. - 11/14/07

    They had so much flavor(added a bit more curry than called for) Also it was so easy and quick to make. Hubby loved them so did I . Will definitely make them again. I will add more broth and cornstarch though. - 9/12/08

    It was so very good! I subbed turkey breast chops for pork chops b/c I had gastric bypass and pork does not do well. It was fantabulous! I would add more green onions next time because I love them, and it might need a bit more oil if you don't have a non-stick pan. My chops started to stick. Yum!!! - 3/8/08

    We really liked this tonight. I agree will increase chicken broth next time for more sauce. Is also good with dried apricots, if you don't have mango on hand.

    I really liked this recipe. I actually coated the chops with the curry well before dinner time and let them "marinate". I left off the coconut, but the rest was great. My husband, however thought this recipe was just okay so I am not sure if it is going to see many repeat performances. - 3/16/09

    Very good recipe. I did as others did and doubled the chicken broth. I did not double the cornstarch, since we don't like our sauce too thick. I also added some crushed red pepper flakes for a little more kick and I added some cilantro. This is deffinately a keeper. - 6/29/09

    I made this tonight and used frozen mango instead of fresh. I diced it while it was still frozen and it was so much easier than fiddling with a whole mango, plus I was able to get a very tiny, uniform dice. This is a pretty dish but I thought it needed a bit more kick and a little more sauce. - 12/6/09

    This recipe is spectacular. I fix it with red curry, golden raisins, and olive oil. I'm not a big onion fan, so I just throw in some freeze-dried chives. I usually serve with jasmine rice and stir fry asparagus mix for a meal that is deceptively easy and undeniably delicious! - 9/17/09

    I love pork chop recipes and I also love fruit cooked with meats or as a relish/chutney side. This is a good recipe for those who like curry. I think if you don't, you can delete that ingredient/spice from the recipe. - 7/2/09

    both my husband and I loved this recipe. I added a little curry to the broth, and used about 1 cup broth and 2 tsp cornstarch. I added some red pepper flakes, ginger and garlic to the broth before adding to the pan. I also added the mango and coconut to the pan to warm it through. Served with rice. - 2/1/10

    Yum! I love the taste of curry, but never know of a simple way of preparing it. This was so good and so easy! I didn't have everything, so I subbed chicken breast, dried cranberries, and canned peaches and increased the curry by a lot!
