Ingredients

2 C. flour
1 tsp. soda
1/4 tsp. salt
1/4 c. butter & 1/4 c. unsweetened applesauce
3/4 c. brown sugar
2 eggs, beaten
2 c. mashed banana & 1/3 c. unsweetened applesauce
1 tsp. vanilla
1 tsp. cinnamon
Directions
Preheat oven to 350 degrees. Spray a loaf pan with non-stick spray.
In a large bowl combine flour, baking soda & salt. In a separate bowl cream together butter & brown sugar. Stir in eggs, mashed banana, and applesauce (both measurements) until well mixed. Stir in banana mixture into flour mixture, just enough to moisten. Pour batter into prepared pan. Bake for 60-65 min or until toothpick inserted in center comes out clean. Cool for 10 min., invert onto a wire rack and cool completely.
