Number of Servings: 4

Ingredients

    Sweet Potato, baked (or canned), 1 cup (or substitute cooked pumpkin)
    Greek Yogurt, Plain, 1/4 cup
    Brown Sugar, 2 Tbsp unpacked
    Banana, fresh, 1 small
    Milk, 1%, 2 cup
    Vanilla Extract, .5 tsp
    Cinnamon to taste
    Ice cubes, 5 or as desired to increase volume

    Chocolate chips 1 Tbsp, melted

Directions

Melt chocolate chips for 15 second increments in the microwave, stirring between each increment.

Use a paintbrush (food safe) to paint jack o'lantern or halloween (or fall, or your kid's name, etc.) on inside of chilled glass. Put glass in freezer while you make the smoothie.

Add all ingredients (except chocolate chips) and blend until frothy.

Serves about FOUR 8-oz glasses.

    well, I went ahead and tried it. wasn't sure about the sweet potato and did not put in chocolate. It is good. Very filling. gave some to the toddlers and they liked it. - 10/30/08

    Tried this recipe out on two teenage girls. They loved it! I did use the chocolate and painted "Boo" and a pumpkin face on the inside of the glass. Thanks for a healthy fun Halloween treat. - 10/31/09

    Haven't made this exact one, very cute. But Ive made one similar that called for mashed sweet potato, orange juice, almond milk & it was definitely yummy. Nutmeg also a good spice to add. - 3/27/12

    Incredible!
    LOVED IT!! I am a huge fan of sweet potatoes, and I was glad to have another way to enjoy them. I did substitute sugar free maple syrup instead of the brown sugar. Also, I added pumpkin pie spice & ground cloves instead of just the cinnamon. Next time I will try it without the banana. - 9/29/11
