Introduction

Ingredients

    - 1 egg
    - 3 T. flax seed meal
    - 1/2 t. baking powder
    - 1/2 t. vanilla
    - 1-2 packets splenda
    - cinnamon and/or nutmeg to taste

Directions

: Heat a skillet to medium heat.
Spray with PAM or similar.
Mix everything together and pour onto skillet.
Basically cook like a normal pancake.
You can top with sugar-free pancake syrup or SB friendly margarine like smart balance, if desired.

    Thank you for this recipe! I am on South Beach Phase I, day 4. It's great, but I can't eat eggs every morning. I had this morning with Joseph's Sugar Free Syrup (delicious). I didn't add any splenda or sweetner and didn't miss it. - 1/18/12

    Very Good
    These were such a wonderful alternative to eggs, eggs, eggs for breakfast while on phase 1 of South Beach. They don't taste as good as regular pancakes, but they're definitely better than eggs (in my opinion). - 3/3/09
