Ingredients

    2 lb Beef chuck, arm pot roast
    2 large Onions, quartered
    1 12 oz. can Coconut Milk
    2 cloves Garlic, minced
    2 T. Grated fresh ginger
    2 tsp Curry powder
    1 tbsp Coriander seed, ground
    2 T. Brown Sugar
    1 T. chili pepper paste otr flakers (or to taste)
    Salt and pepper to taste

Directions

Sear beef quicklly on high heat to brown on all sides, but not to cook. Put in crock pot with garlic and onions. Combine coconut milk with spices and pour over all. Cook low 6-8 hours and high 3-5.

    Wow. Finally a beef curry recipe with flavor AND tenderness. The spices were very well-proportioned. I added bamboo shoots, a red bell pepper, fish sauce and mushrooms. Served with jasmine rice.

    None of these additions were totally needed. I cooked 6 hours on low heat, which produced very tender
