Ingredients

5 pounds red potatoes
2 teaspoons chicken bouillon granules
6 cloves garlic, minced
8 ounces reduced-fat cream cheese
8 ounces reduced-fat sour cream
1 teaspoon ground black pepper
Tips
The potatoes can be prepped ahead of time and finished the day of your big dinner or party. The potatoes hold well for extended periods of time if you stir periodically to avoid drying around the edges. As a bonus, this version is lower in calories and fat than traditional mashed potatoes.
Directions
Scrub the potatoes and cut them into chunks. Do NOT peel.
Rinse well and transfer to a stock pot. Cover with cold water by 6 inches, add the minced garlic and bouillon granules. Bring to a boil and cook approximately 10 minutes, or until potatoes are fork-tender.
Drain, reserving liquid. Add cream cheese and sour cream to pan and mash potatoes, adding reserved liquid as needed to achieve desired consistency.
Transfer to a slow cooker and cook on low for 2 hours. Before serving, stir well and season with ground black pepper to taste.
Makes approximately 18 (1/2 cup) servings.

I created something very similar at thanksgiving dinner because we were short on pots. I cooked the potatoes on HIGH in the slow cooker for about 3 hrs, while the turkey roasted in the oven. Drain, add other ingrediented, and mash with a hand mixer right in the ceramic pot, then keep on very low. - 12/15/09

That's helpful to know. The whole shebang can be done all in the slow cooker. I wasn't sure about using the mixer inside the crock for fear of chipping the glaze. That wasn't a problem?

Delicious! I made a modified version of this recipe--boiling the potatoes on the stove instead and using garlic powder instead of minced. Used this as the potatoes on a casserole but saved some just to nibble on. They were outstanding--and the casserole was better than ever! Thanks! - 12/10/08

I developed the recipe as a make-ahead dish that could be easily transported to covered-dish dinners. That is the only purpose of transferring them to the slow cooker.

Thanks for taking time to rate my recipe. You may want to adjust the seasonings to your family's tastes. The addition of fresh herbs or salt may perk it up for you. I don't cook with much salt due to being on a sodium-restricted diet.

I made about a 1/4 of the recipe for dinner and used a can of (reduced sodium, fat free) chicken broth with water as a substitution for the bouillon. I also left out the crockpot transfer since we were eating right away. Turned out GREAT! - 11/5/12

This looks good and I think I will make it for Thanksgiving. I am just a little nervous about using fat-free dairy products--they never taste good on their own, so I usually use lowfat or reduced fat dairy products. Everyone seems to like this though so maybe I will try the fat-free... - 11/23/10

I honestly don't think you will detect a difference using the fat-free products in this recipe. It gets most of its flavor from the potatoes and garlic and the fat-free products do not have a negative impact on the texture or consistency. Give'em a try. Let me know how they work out for you.

If you don't halve the other ingredients, you may not be happy with the results. They may end up with the potatoes being too "mooshy." It really is nice to be able to have the potatoes going ahead of time. Makes it easier to get everything ready at the same time, I think.

The sour cream is mainly for consistency, so I would think you could substitute skim milk, but you might want start with a smaller amount and keep adding until you get the desired consistency. My DH is not a fan of sour cream, either, but he doesn't even taste it in this recipe.

I think you should omit the salt entirely. If the potatoes aren't salty for some folks, they can always sprinkle some on at the table. Personally, I prefer them unsalted, but DH is a salt addict, so we compromise.
