Introduction

This citrusy rice contains almonds, celery, and onions, but no added salt for a flavorful low sodium side dish. This citrusy rice contains almonds, celery, and onions, but no added salt for a flavorful low sodium side dish.

Ingredients

    • 1 1/2 tablespoons olive oil
    • 1 1/4 cups finely chopped celery with leaves
    • 1 1/4 cups finely chopped onion
    • 1 cup water
    • 1/2 cup orange juice
    • 2 tablespoons lemon juice
    • dash hot sauce
    • 1 cup long-grain white rice, uncooked
    • 1/4 cup slivered almonds

Directions

1. Heat oil in medium saucepan. Add celery and onions and sauté until tender, about 10 minutes.



2. Add water, juices, and hot sauce. Bring to a boil. Stir in rice and bring back to a boil. Let stand covered until rice is tender and liquid is absorbed.



3. Stir in almonds. Serve immediately as a side dish for a fish entrée.



Yield: 4 servings--Serving Size: 1/3 cup

    I followed the recipe as given, only substituting crushed chilies for the hot sauce and using instant white rice. I found the citrus to be a bit overpowering and would add maybe half of the orange juice next time. Otherwise it was very enjoyable. - 2/28/09

    Mixed review: I loved it because I REALLY like citrus. I won't make it again because my family did NOT like it... So, I averaged the rating, weighted toward my opinion. Conclusion: if you don't like citrus, don't bother. - 2/26/09

    I thought this was great! I read all the ratings comments, first, though, so I knew to use Uncle Ben's Instant Brown rice--it cooks in 10 min. So no problem on the liquid amount. Interesting blend of flavors and textures! - 1/30/09

    Made a few changes to make it yummier and healthier:
    Added frozen peas, carrots, green bell peppers, and red pepper.
    Used brown rice instead of white
    Fried Super Firm Tofu chunks in olive oil and Cajun Seasonings and added it to the mix (to replace fish, since I'm vegan)
    Ended up delicious!

    I love this! I just fried the rice in the oil with the onion and celery after they softened. Then turned down to low and covered for 20 minutes after putting in the liquid. I think people are confused by the directions a bit. I will try brown rice next time, but this is fantastic rice!! - 2/11/08

    I would use brown rice for a lower calorie intake and nutrition boost. I think if you mix in some white beans or chick peas, this could be a meal in itself. - 1/29/09

    I am a rice lover and I found this to be a very refreshing change to the usual brown rice. If your rice comes out hard, you haven't used enough liquid. Next time, add a little extra water and try boiling the water in the tea kettle before putting it in with the rice. - 7/10/09

    there is not enough liquid in this though, we had to add extra (half water and half OJ) twice. I think the instant is the way to go. (Some people are raised with instant rice, maybe thats the situ.) Otherwise very good!! - 10/1/08

    I didn't have orange juice so I used mango flavored ice tea. I did have fresh lemon. My husband loved it. He does like citrus though. I also added green peppers chopped up with the onions and celery, but I don't think it added any flavor. - 8/2/09

    Delish! I used instant brown rice, veggie stock for orance juice and add lemon and lime basil for the fruity flavor. Also switched the onion out for a little garlic cuz I don't like onion. - 7/12/09

    Hmm...well the rice won't get soft. I've added more water and OJ to it and letting it sit, but that's just weird not cooking rice in regular form. Now the instant rice makes sense. The rice was still hard and I'm sure I've messed it up by now. Good idea, but won't make again. Hate crunchy rice! - 2/10/08

    Can you use brown rice instead of white? I haven't tried this either but I wanted to respond to the Celery Leaves comment. Celery Leaves do NOT cause gallstones. Gallstones are caused by high fat/cholesterol in the diet. There is not a thing wrong with celery leaves so go ahead and use them! - 1/29/08

    This was great! I modified by using sweet rice (which is sticky) and instead of OJ I used one large orange, about double the lemon juice and hot sauce, and added a handful of dried cranberries! My family and I loved it! - 3/3/10

    Those with kidney stones or problems probably shouldn't eat many celery leaves but celery is good for you and so are the leaves:
    According to Hippocrates (the father of medicine), celery calms the nerve – perhaps because of the high calcium content.

    This sounds good. There is enough liquid in the recipe to cook a cup of regular white rice. Just need to boil it for 20 minutes or so, and then let it stand for 5 minutes with the lid on. Will give this one a try

    I haven't made this yet but will. TammyHooper where in the world did you get that information about celery leaves? Prior to gall bladder surgery I did a lot of searching on what not to eat and celery leaves was never mentioned - fats, or high cholesterol foods should be avoided - 11/14/07

    I don't know about the celery leaf thing that Tammy talks about....I've used them all my life and they give salads and soups a very nice flavor boost! I like the way this recipe looks and because of the celery leaves...I'm going to make it. - 8/2/07
