Ingredients

    4 8-inch whole wheat fat free tortillas
    2 cups baby spinach (bagged)
    1 cup frozen corn, thawed
    1 cup canned black beans, rinsed & drained
    1/2 cup shredded low fat cheddar cheese
    8 ounces thinly sliced cooked steak -OR-
    8 ounces thinly sliced cooked chicken breast
    1/4 cup BBQ sauce

Directions

Preheat the oven to 400 degrees. Divide the spinach, corn, beans, cheese and steak among the tortillas. Drizzle BBQ sauce over and wrap them up.

Heat thoroughly in baking dish lightly coated with cooking spray for 10 minutes.

    WOW....I shredded the steak and mixed it together with the rest of the stuff then place them on the tortilla. My kids had no idea the vegetables were in there. They loved them!!!! - 2/25/08

    This was really good - the only issue was that the steak pieces tend to not tear easily so I would recomnmend cutting the strips into smaller pieces to make eating them easier and a little less messy. - 3/19/07

    delicious! if sour cream sounds like a devilish addition to this meal, just substitute plain yogurt. Its higher in protein and you wont even be able to tell the difference! - 1/17/10

    These turned out very well, I liked them even better the next day. I think in the future I will make them as a make ahead meal to take for lunch. They reheated nicely in the microwave. - 5/7/10

    Very good [I didn't follow the recipe to a tee, though]. Instead of beef I used chicken, omitted the cheese, and instead of putting the corn and spinach in the tortillas without any heat to them, I mixed them in with the shredded chicken and cooked for about 10 min. b4 wrapping it all up & baking. - 5/1/09

    Great versatile recipe. I "sauteed" chicken in a little broth with minced onion, garlic, and the spinach and BBQ sauce before putting it all together, using jack cheese, mashed black beans and baking it. Great!

    Also, makes a "healthier" burrito using taco sauce instead of the BBQ sauce.

    I made these and they were a hit at my house. I did the chicken instead of steak. I boiled the chicken & chopped it with my hand chopper. Nobody even knew the spinach was in it. My daughter ate hers cold while the rest ate them hot...good both ways!! - 5/23/10

    This was amazing. Super easy and quick. It sounded alittle strange but it turned out great we don't care for black beans or spinach but they tasted fanastic in this dish. The bbq sauce really set it off. All I can say is yummy - 8/13/10

    I think I like WORK-IN-PROGRESS's idea of cooking the spinach and corn in with the steak before you combine the rest in the tortilla. It was all kind of bulky to roll properly, so I closed it with toothpicks. I used a rib eye steak which probably upped the calorie count. - 6/25/10
