Ingredients

    2 tbsp olive oil
    ½ teaspoon ground cumin
    ½ teaspoon turmeric
    1 red onion, sliced
    2 garlic cloves, crushed
    1 red pepper
    1 carrot
    3 sticks of celery
    255g/9oz vegetarian mince such as Quorn
    450ml/16fl oz vegetable stock
    400g/14oz can chopped tomatoes
    4 tablespoon tomato puree
    400g/14oz can red kidney beans, drained and rinsed
    salt
    freshly ground black pepper


Directions

• Heat the oil in a large frying pot. Saute the spices for few minutes.
• Add in the onion and garlic and fry for 3-4 minutes.
• Add the pepper, celery and carrots and cook for 4-5 minutes.
• Stir in the vegetarian mince and fry for couple of minutes.
• Add the stock and the tomatoes. Cover and simmer for 20 minutes.
• Add the kidney beans and simmer for a further 15 minutes.
• Season to taste with salt and freshly ground black pepper.
• Serve with corn bread and/or steamed rice and a spoon of tomato salsa

    This recipe was DIVINE!!! my partner loved it and he is not one for vegetarian or healthy!! He said this was the best meal I have made for him in a while and can we have it again!! well it is a week since I made it and he asked me this morning for this recipe tonigh's dinner!
