Introduction

This dish is almost fat-free, but is still very creamy and tasty. This dish is almost fat-free, but is still very creamy and tasty.
Number of Servings: 12

Ingredients

    1 lb dry elbow pasta (or similar shape)
    1 12oz can evaporated skim milk
    1 14 oz can Whole Artichoke Hearts (packed in water, NOT in oil), drained & chopped
    1 1/2 cups frozen spinach, thawed & pressed dry
    1 medium onion, diced
    1 package Knorr Creamy Pesto Sauce Mix

Directions

Cook pasta al dente according to package directions, drain and set aside.
In drained pasta pot, heat diced onion, spinach, chopped artichoke hearts, Knorr pesto sauce mix and evaporated skim milk until onions are translucent. Add pasta back into pot and stir to coat.

Serve hot. (Optional: top with grated Parmesan cheese)

    Photo uploaded is from me! I used 4 oz of fat free cream cheese instead of evaporated milk, and a little pasta water to thin the sauce out! This was great, a neat trick I will use to make pasta and cut some calories, maybe try with spinach, peas, and zucchini next time for more veggies! YUMMMM! - 5/14/12

    I used whole wheat pasta, and added garlic and 2 10 oz. cans of chicken. I also subbed half the evaporated milk for 2% to save a few calories. Turned out GREAT!! I made the whole recipe and we have leftovers that will last us forever! :) - 4/15/09

    I made this for dinner tonight, I didn't have skim evaporated milk,canned artichokes or Knorr pesto mix. I used whole grain pasta, reg evap milk and frozen artichoke halves w/frozen spinach. Added garlic, grilled chicken and topped with chopped tomatoes upon serving. Very yummy. - 6/20/10
