Ingredients

1 pound walnut or pecan halves (or a mix), shelled
1 egg white
1 tsp. cold water
1/4 c. granulated sugar (white or raw works equally well)
1/2 tsp. salt
1/2 tsp. spice (cinnamon, paprika, allspice, ginger, your preference really--experiment!)
Directions
Preheat oven to 225 degrees F.
In a small mixing bowl, beat egg white and water till totally incorporated. Stir nuts in gently (use a rubber spatula), mixing till thoroughly coated with egg mixture.
Mix sugar, salt and spice in a small bowl till evenly combined. Pour over nuts and stir (gently!) till well coated.
Spread nuts in a single layer on parchment lined baking sheet. Bake at 225 deg. F for 45 minutes, stirring a couple times throughout. Raise oven temp to 275 deg. F. Stir nuts again and roast an additional 15 minutes.
Let cool completely before storing (they will be slightly gooey when you take them out of the oven, but they crsip up as they dry).
