Introduction
Yummy cooked with just a spritz of cooking spray & served hot with a sprinkle of artificial sweetener or my favorite, sugar reduced fruit spread. Ingredients

2 cups 1% milk fat cottage cheese
4 eggs lightly beaten (just stir with a fork)
1 tsp salt
1/2 cup all-purpose flour
Directions
Stir together all ingredients. Let sit for at least one hour but overnight is fine. Cook on a non-stick griddle preheated & lightly sprayed with cooking spray. Turn after the edges begin to turn brown & surface is slightly dry looking; about 5 min at med temp. Serve hot with artificial sweetener OR sugar reduced fruit spread. Makes 8 4in. pancakes. Each serving is 2 pancakes.
