Ingredients

1 tsp canola oil
1 tsp asian dark sesame oil
4 cups coleslaw mix
1 bunch scallions, sliced
1/4 tsp red pepper flakes
2 cups finely chopped cooked chicken
2 tbsp chopped unsalted dry roasted peanuts
juice of 1/2 lime
2 tsp low sodium soy sauce
1/4 c chopped fresh basil
10 iceberg lettuce leafs
Directions
1. Heat the canola oil and sesame oil in a large nonstick skillet over medium high heat. Add the coleslaw mix, scallions, and red pepper flakes' cook, stirring frequently, until the cabbage begins to wilt, about 5 minutes.
2. STir in the chicken, peanuts, lime juice, and soy sauce. Cook, stirring frequently, until heated through, about 5 minutes. Stir in the basil.
3. Top the lettuce with the chicken mixture and roll up.

Thanks! So glad you liked it - I got it from cooking light magazine. You can also mix up some soy sauce and some sambal oelek (ground chile paste) for a spicy sauce to add to it. You should try the tex mex calzone recipe I just submitted. It is so easy and is my new favorite thing! Thanks again
