Ingredients

    530 gr cooked and drained lentils, I use a can, rinsed
    .5 cup lowfat plain yogurt
    2 TBLSP Dijon mustard
    1 TBLSP vinegar
    1 tsp thyme
    .25 tsp pepper
    250 ham cubed
    .75 cup chopped celery
    .75 cup chopped red onion

Directions

Makes 6 servings

Make dressing out of yogurt, dijon, vingar, thyme, pepper

Toss with the rest of ingredients, chill.

    This looks like a wonderful recipe. Looking forward to trying it this week! If I can find some lower Sodium type of ham, I'll use that to trim down the overall sodium count. Other than that, I won't make any other changes to this great & easy-to-make recipe. Thanks AKASHA! - 4/7/09
