Ingredients

    1 pound 93% ground beef
    6 oz can tomato paste
    2 cups warm water
    1 cup shredded 2% cheese
    1 tsp salt
    1 tsp onion powder
    1 1/2 tsp chili powder
    1/2 tsp cumin
    1/4 tsp garlic powder
    dash each oregano, black pepper, coriander
    10 soft corn tortillas

Directions

Brown hamburger. Add seasonings to warm water, combine. Add tomato paste. Mix well.
Warm up tortillas.
Pour 1/2 of tomato mixture into the skillet with the hamburger. Add half of cheese. Stir to mix up the meat, tomato sauce and cheese. Scoop a large spoonful of the mixture onto each tortilla. Rollup the tortilla, enclosing the filling and place it seam side down in 13x9 pan. Pour remaining tomato mixture over tortillas and sprinkle with cheese. Bake at 350 for 30 minutes.

    I found that it helps to steam the tortillas first. That way when you roll them, the tortillas stay closed. - 1/10/08

    I altered it some -- threw in a small can of diced green chiles, used cream cheese in the meat mixture instead of shredded cheese, and put onion in with the meat. Great base recipe -- it was a most excellent dinner! - 7/24/08

    I thought these were good but my husband thought they needed more seasoning/flavor. I'll probably use an enchilada sauce or more spices next time, but we'll make this again! This was gluten free too, a nice bonus. :) - 8/23/10

    This was absolutely fabulous! My husband is the pickiest person and couldn't wait till I made these again. I use wheat tortillas instead of corn and I use Venison instead of beef, but other than that I followed the recipe to a t!

    Added to my Made-Tested-LOVED category! Forgot to put the cheese inside & used .25 cup over the top. Didn't miss it at all. Also didn't have any onion powder or coriander-didn't miss them either.     Excellent! I planned on making it as the recipe called for, but was tired so just made it a casserole by layering all of the ingredients instead of rolling up.     I love this dish.. for an even easier dish.. just layer the tortillas and mixture of meat and sauce.. for a cassarol to keep the calories the same just cut it into ten servings.. these are low enough for 2 servings each..yummmm - 10/7/10

    This was delicious and super easy. I didn't have tomato paste so I used 12oz of tomato sauce instead and just decreased the water to 1 1/2 cups. I still turned out great and my picky eater husband and toddler enjoyed it as well. - 9/23/10

    This was a great dinner. We all loved it. I did add my personal touch ...
    I added a can of diced tomatos with hot peppers, 1/2 teaspoon of red pepper (it decreases appetite), browned the meat with 1/4 cup of water, then drained the water and fat in a colander.

    This sounds good. I will use salt free tomato paste and cut the salt...add some garlic , maybe cilantro and jalepeno. I will most likely substitute flour tortillas for the corn. - 7/14/07
