Ingredients

    1 eggplant
    4oz. goatcheese
    drizle olive oil

Directions

slice eggplant 11/2 inch thick,place oil in a backing pan add eggplant on top of each eggplant add goat cheese,and make (like a sanwich) one eggplant one piece of goat cheese,.....roast in oven on 450F for 15min.untill brown on top..

    Delicious + SO easy to prepare. I used cooking spray to
    minimize oil used--worked well. Cooked more quickly than I thought it would. Let it cool a bit so flavors would blend.
    Definitely will do again & again. THANKS!
