Ingredients

    4 ounces day-old French or Italian bread, cut into 3/4-inch cubes (about 4 cups)

    1/3 cup golden raisins

    1 (3-ounce) package cream cheese (low or no fat) cut into 1/4-inch cubes

    3 large eggs

    1 1/2 cups 1% milk

    1/2 cup maple syrup

    1 tsp vanilla extract

    2 Tblsp granulated sugar

    1 tsp cinnamon

    Additional maple syrup, optional

Tips

This takes french toast to the next level. A disastrous french toast morning made for my son's friends left me wondering if there was a better way. Needless to say my son never brought his friends for breakfast again. Since then, this french toast casserole is absolutely delicious and loved by all. It is great for days when the kids have off from school and doesn't require any last-minute preparations. Arrange the eggs, milk and flavorings the night before so the flavors have time to soak into the dry bread cubes. Delicious! Wish I would have had this recipe back then!


Directions

Spray 11 x 7 inch baking dish with nonstick cooking spray.

Place bread cubes in single layer in prepared baking dish. Sprinkle golden raisins and the cream cheese cubes evenly over the bread cubes.

Beat eggs in medium bowl with electric mixer set at medium speed until well blended. Add milk, maple syrup and vanilla extract; beat until well blended.

Pour egg mixture evenly over bread mixture. Cover; refrigerate at least 4 hours or overnight.

Preheat oven to 350 degrees F. Combine sugar and cinnamon in smnall bowl; sprinkle evenly over casserole.

Bake, uncovered, until puffed, golden brown and knife inserted in center comes out clean, about 40 to 45 minutes. Cut into squares and serve with additional maple syrup, if desired.

    oh my, too good! I used maple syrup from our own trees. Next time I will not cube the bread, just use it sliced. I will spread the cream cheese evenly over each piece of bread rather than useing cube cream cheese. I got one piece of this! DH ate all the rest. - 11/13/10

    So many different ways of changes this a little to make many different ones. Absolutely the best! I make a Mapleine syrup which is thin and fewer cals with great flavor but for the mix here, the real maple syrup is much better. - 5/16/17
