Ingredients

    3/4 cup Hellmans Light Mayonnaise
    1/4 cup chopped pimento, drained (1 2oz jar)
    1/4 cup chopped onion
    1/4 cup sweet pickle relish
    1 teaspoon prepared mustard
    1/8 teaspoon black pepper
    3 cups cold cooked macaroni, rinsed and drained
    sugar substitute to equal 1 T sugar

Directions

In a large bowl, combine mayonnaise, pimento, onion, pickle relish. sugar substitute, mustard, and black pepper. Add macaroni. Mix well to combine. Cover and refridgerate for at least 30 min. Gently stir again just before serving.

    I do a less lo-cal version of this. I add cubed cheese, cubed ham or chicken, and some peas. No need to add a lot. Even a little adds color and extra taste. Keep the cubes small. It adds protein and makes it a meal rather than a side dish. At a family event I had dishes of these to add. - 7/10/12

    I'm a little confused. One nutrition guide for this recipe states only 98 mg sodium and the other one states 432 mg. Which one is correct? I have to watch my sodium intake. - 2/19/12
