Number of Servings: 6

Ingredients

    Fire Roasted Tomatoes, 2 cans
    Garden Rotini (dry), 3 cup
    Gourmet Chicken Sausage with Spinach and Asiago Cheese, 4 serving (links)
    Spinach, fresh, 2 cup
    Mushrooms, fresh, 2 cup, pieces or slices
    Garlic, 3 cloves
    Green Peppers (bell peppers), 1 pepper
    Parmesan Cheese, grated, .5 cup

Directions

Bring water to boil to make rotini as instructed on package.

Slice sausage into bite sized pieces. Place in skillet and "brown" (chicken sausage does not turn brown- check consistancy and temp). Slice pepper. Add pepper, cook 2-3 minutes until pepper is translucent. Add mushrooms. Saute until tender (add a little water if needed to keep mushrooms from drying out). Pour fire roasted tomatoes over sausage. Add garlic. Turn on low and simmer 10-15 minutes or until pasta is done. Add parmesan cheese after turning off heat. Serve sauce tossed with pasta.

Serves 6.

    Very tasty and filling. The chicken sausages added an interesing flavor. Originally recipe made 4 servings, but it was so filling one serving was too much. 6 servings for this amount is more reasonable.
    I have revisited this. More like 8 servings.

    Incredible!
    I used Italian turkey sausage instead because I couldn't find the chicken sausage. I also used half a package of frozen spinach -what I had on hand and added 1 c onion. It was delicious! I will definitely make this again! I made 5 servings of a little more that 1 1/2 cup. - 8/19/12

    This was very good and SO filling. I added some red onion and lots of Italian herbs and crushed red pepper since I couldn't find fire roasted tomatoes. There was enough leftovers for dinner the next night - bonus! - 5/16/10
