Introduction

This hearty sandwich is stacked full of crunchy, fresh veggies stacked so high you'll have to open wide! This hearty sandwich is stacked full of crunchy, fresh veggies stacked so high you'll have to open wide!

Ingredients

    2 slices whole grain, high-fiber bread (like Milton's)
    1 thin slice of light swiss cheese
    1 layer of fresh organic baby spinach leaves
    3 rings of organic red bell peppers
    3 rings of sliced red onion
    2 thick slices of organic tomatoes
    2 dill pickle "sandwich slices"
    1 handful of alfalfa sprouts

    Optional: 1 tsp. stone-ground mustard; handful of shredded carrots; sliced cucumbers.

Directions

Slice veggies and assemble sandwich.

    I eat a similar sandwich almost daily-love veggie sandwiches! I use a lower calorie wheat bread and add 1-2 tbsp spicy wholly guacamole for about the same calories. - 1/16/12
