Ingredients

    1 cup sweet corn
    1/2 cup refried beans
    1 cup Cotija cheese
    3 flour tortillas
    3 tbsp red taco sauce
    1/4 cup onion, chopped
    16 oz extra lean ground beef
    2 tsp taco seasoning

Directions

Preheat oven to 350 degrees. Brown up the meat as you would for tacos. Add the taco seasoning and water when browned.
For this recipe I like to put the raw corn on the BBQ, so it has that BBQ flavor, just until it is blackened lightly. Cut the corn off of the cob and seperate the kernals.
In a small round baking dish, place one tortilla, a tablespoon or two of beans and spread it around.Take a palmful of the Cotija cheese and spread it on top of the beans. Then add the taco sauce and the onions, if you like. On top of this place a scoop of the taco seasoned beef. Layer two more times. On the top of the last tortilla, cover with beans, taco sauce, and remaining Cotija.
Bake in the oven for 45 minutes covered in foil. Take off the foil and bake until cheese is browned and melted thoroghly.

    COTIJA is a dry mexican cheese , normally comes as fine as "parmesan cheese" and you can use it on top of tacos, tostadas or "coctel de elote"(hot corn in a cup with sour cream salsa and COTIJA) :) - 1/8/12

    This sounds great, but something is off with the nutrition. The cheese is listed twice in the details which will alter things and you've got (I think) 1/4 of the ingred. there which makes it hard to understand. - 3/12/09

    Cotija cheese is a white semi hard cheese that is crumbled over food; the Mexican version of the Italian Parmesan. Any shredded cheese (non fat) could be used in if it was not available in your area.
    But it does sound good and I will try it with the cheese substitution.

    It's really 4 servings, so when you post it to your tracker, put .25 serving. The writer got it wrong in the nutrition list, but does tell in the recipe that it makes 4 servings. - 11/7/08

    What size tortillas are used? I know any would work, but it affect the servings and nutritional info.

    This sounds great - try it with lean ground tturkey, or even ground chicken, fat-free vegetarian refried beans, low-fat cheese, low sodium taco seasoning, whole wheat tortillas, and salsa. Top with fat free sour cream & guacamole. Yum!!! - 11/7/08
