Introduction
I think that gazpacho is quite the refreshing soup option--especially in the summer. It goes well with a simple sandwich as well as something a little fancier and off the grill. Ingredients

1 Cup Chopped: Red Onion, Green Pepper, Cucumber
1 Cup Chopped and Seeded Tomato
1 1/2 Teaspoon Garlic, chopped
1 1/2 Teaspoon Kosher Salt
1/4 Teaspoon Cayenne Pepper
1/4 Cup Tomato Paste
1 Tablespoon White Wine Vinegar
1/4 Cup Extra Virgin Olive Oil
4 Cups Tomato Juice
1 Sprig Thyme
Directions
Makes 6 one-cup servings.
1. Mix all ingredients in a bowl, cover and refrigerate (ideally overnight so that all of the flavors start to combine together).
2. The next day, blend until smooth and refrigerate until served.
Helpful hints:
Refrigerating the ingredients overnight will help to better lock in the flavor (but I have made it just before serving and it is still quite tasty).
Don't worry about chopping your veggies into perfect cubes, we are only doing so to make it easier to blend them together.
Serve with Avocado Whip!

I felt this recipe was a good beginning...I eliminated the salt and olive oil, (plenty of salt here) subbed fresh lime juice for the vinegar, and added a pinch of crushed cumin seed. I didn't bother seeding the tomatoes, since using the blender grinds them up anyway. All in all, a good healthy soup - 12/18/10
