Introduction

Number of Servings: 14

Ingredients

    1 - 14 oz box Barilla Plus Elbow Macaroni
    2 carrots, grated
    1 stalk celery, diced
    1/2 green pepper, diced
    3 tbsps onion , finely diced
    1 1/2 tsps sugar
    1 1/2 cups light mayonnaise
    4 tbsp regular vinegar
    2 tbsps fat free milk


Directions

Cool macaroni acording to package directions. Drain and rinse with cold water.
While pasta cooks, grate and chop carrots, celery, green pepper and onion. Combine vegetables with cooled, drained pasta. Add sugar, mayo, vinegar and mix well. Add the milk and stir well (this moistens the salad a bit more and will not curdle, I promise!). Season with salt and pepper to taste. Chill at least 1 hour to let flavors blend.

Serving size is 1/2 cup

    Very Good
    I really enjoyed the crunch of the pepper and onion. The contrast of the sugar and vinegar was a refreshing combination. I lightened up the calories even further by using a little less mayo, which suited my own personal taste better. - 6/10/11
