25-minute start-to-finish wraps. These are STUFFED tortillas and one will make an entire dinner, with possibly a serving of fat free refried beans on the side. 25-minute start-to-finish wraps. Ingredients

    1 package (8) Tam-x-ico's Lo-Carb Wheat Tortillas
    1 lb. Chicken Breasts, trimmed
    1 box Zatarain's Dirty Rice Mix
    1/2 cup Green Onion, chopped
    1 can (15 oz.) Bush's Seasoned Black Beans
    1/2 tsp Onion Salt
    1/2 tsp Garlic Powder
    1 tsp McCormick Hot Shot Red & Black Pepper Blend
    16 oz. Kraft Fat Free Sharp Cheddar Cheese, shredded
    1 cup Iceburg Lettuce, shredded or broken up
    1 cup Tomatoes, diced
    1/2 cup Sour Cream, fat free

Directions

1. Start the rice per the package instructions (no meat added).

2. Finely chop the green onions.

3. Begin cooking the chicken on medium heat.

4. Season the chicken with the onion salt, garlic powder, and Hot Shot

5. Add the green onions.

6. As the chicken gets closer to being done, cut it with the spatula you're using into small, 1/2 bite-sized pieces.

7. Shred the lettuce and dice the tomatoes.

8. When the rice has about 10 minutes left, add the beans to the chicken.

9. Once rice is done (don't wait the extra 5 minutes per the box), add in the chicken and bean mix and stir until it's mixed thoroughly.

10. Warm the tortillas in the microwave while you're mixing so that they're done at the same time.

11. Spoon mixture into tortillas until they are each 3/4 full. These fold more like fajitas, or tacos, than wraps.

12. Top with cheese, shredded lettuce, diced tomatoes, and sour cream.

These could easily be made into 16 wraps simply by halving the portion size you put into each tortilla. Don't forget to add the extra tortilla calories if you do this though!

I serve with a side of fat free refried beans topped with some reduced fat Mexican-Style cheese.

    These really were excellent!! I made them for my family last night and they were very impressed! :) We had corn on the cob left from July 4th and I cut that and used it as a topping on the wraps which added a wonderfully sweet flavor! good job, SEVERUM. - 7/7/09
