Bread Pudding with Oats and Bananas Bread Pudding with Oats and Bananas
Number of Servings: 16

Ingredients

    2 1/2 cups 1% milk
    2 large eggs, beaten
    8 slices raisin bread
    1 cup oats
    1/4 cup melted butter
    1/3 cup brown sugar
    4 ripe bananas, chopped
    1 teaspoon vanilla

Directions

Cut raisin bread into bite-sized pieces and put in a large bowl. Stir in milk, beaten eggs and oats. Let sit for 20 minutes. Preheat oven to 350F. Lightly grease an 8"x 8" pan. To the bread mixture, add melted butter, brown sugar, chopped bananas and vanilla. Stir lightly untilcombined and pour into lightly greased dish. Bake 60 minutes or until set. Cool before serving. Makes 16 2"x 2" servings. Enjoy for breakfast or dessert.

    very good! I used skim milk, 4 egg whites instead of 2 eggs, and I didn't use butter at all. it took more than 60 minutes for it to cook entirely, but it was worth waiting for! very filling and extremely low-fat/low-cal. - 9/14/07

    This sounds wonderful...however, I agree with the previous poster that only eating a 2x2 square is a bit presumptuous, lol! I will probably cut it into 9-squares myself :) I will also replace the sugar with Splenda (love the stuff) and butter with reconstituted Butter Buds (love that stuff too!) - 2/9/08

    Yummy, I only had two bananas but it still had a nice banana flavor. I cooked it in the crock pot on high for 3 hours.
    The only thing didn't like was the color of the bananas in the final product.

    O.K.
    Was ok, but another example of lowering calories by making a serving impossibly small, a half of a slice of bread? Really now, that makes a reasonable portion 350 calories. - 12/11/16
