Ingredients

    1 T low-sodium soy sauce
    1 t hoisin sauce
    1 c warm water
    1 T cornstarch

    1 t peanut or olive oil
    1 t garlic, minced
    1 t ginger, minced
    1 t Thai hot sauce
    2 c mushrooms, sliced
    2 c broccoli slaw or chopped broccoli
    1 c carrots, shredded
    1 roasted red bell pepper
    2 c chicken breasts, cooked and cubed

Tips

This recipe uses two great products that can help you expedite your cooking: jarred garlic and ginger!

Another great tip for busy nights: Bake, broil, grill or poach chicken breasts at the beginning of the week, and you'll have them on hand for meals throughout the week.


Directions

Combine the soy sauce, hoisin, water, and cornstarch in a small bowl. Stir to combine; set aside. In a flat bottomed pan or wok set to high heat, add the oil, garlic, ginger, and Thai hot sauce. Stir fry for 1 minute. Add the vegetables and chicken. Stir fry, moving all ingredients in the wok quickly for 3-4 minutes. Add prepared sauce and continue to cook until the liquid thickens. Serve with brown rice or rice noodles.
Makes four two cup servings.

    When stir frying, I always cook the meat first (especially with chicken) to make sure it gets cooked through. Remove from wok and stir fry veggies, adding meat back at the end.
    For goodness sake, season to your liking - if you find it bland, add some more Thai hot sauce.

    Excellent! Quick and easy. Only thing I would change is to stir fry the chicken first then set aside, cook veggies, then add chicken back in. But more oil will probably be required to cook veggies and is most likely why Meg did it this way. Will definitely cook this again - 3/28/12

    Haven't tried it yet, so can't rate it. However, based on the comments I will add a bit more ginger, garlic and hot sauce. It's hard to understand why several people ask what hoisin is. Ever heard of Google? I've never come up blank when Googling. - 1/7/12

    I substituted fish sauce (since that's what I had on hand) for hoisin sauce, tripled the garlic, ginger, and hot sauce, then added an onion to the aromatics. It was very tasty and my steak-and-potato-loving husband went back for seconds. - 9/18/12

    I have never heard of any cook or chef stir frying the chicken and the veggies together in the beginning in a recipe like this. You usually stir fry the chicken, remove to a plate, then stir fry the veggies, make the sauce then add all back in last few mins. Otherwise great recipe! - 7/17/12

    I recommend slicing the chicken very thin, then put in one egg white along with 1 tbsp corn starch. This keeps the chicken moist while stir frying. I also use napa cabbage. And LOTS more garlic & ginger. - 3/8/13

    I'm trying to figure out how mincing garlic and ginger, slicing/chopping broccoli and mushrooms, roasting a red pepper, shredding carrots and cooking/cubing chicken, can be done in 5 minutes. I've used this recipe before and it's a great recipe, but it takes FAR longer than 5 minutes to prep. - 11/17/12

    I make this often, using various veggies, and meats (The shrimp idea sounds wonderful!) AsJanwosowever said I too, cook the meat first. Remove it, than the veggies, adding the meat back in.     I too cooked the chicken first then removed it and added veggies. I didn't shred the carrots, sliced thin. Our tummies don't like spicy so I added oyster sauce instead. Made brown jasmine rice. Very good! - 7/22/21

    I love chicken veggie stir fries....but have fallen in love with cajun ....so will cook chopped chicken in wok sprayed with cooking spray....remove....add more spray....add loads of veggies to wok...stir fry ....add chicken ..sprinkle with worcestershire sauce and cajun spice to your own liking. - 11/4/18
