Introduction

This is my take on Costco's incredibly yummy Cilantro Lime Shrimp. I like mine with lots of garlic and spicy. You can tone yours down by using less garlic and crushed red pepper. Enjoy! Number of Servings: 4

Ingredients

    1 lb. cooked shrimp
    2 garlic cloves minced finely
    2 T finely minced shallots
    2 T olive oil
    juice of 1 large lemon
    1/4 cup finely chopped cilantro (use more or less to preference)
    3 T finely chopped lemongrass
    salt to taste
    ground black pepper to taste
    crushed red pepper flakes to taste
    6 cups of fresh greens

Directions

Wash greens and set aside.

Combine finely chopped shallots, garlic, cilantro, and lemongrass with cooked shrimp, olive oil, lemon juice, few dashes of salt, a few dashes of pepper and hot pepper flakes (I use a few shakes; you should season to preference) in large bowl. Refrigerate for several hours to allow flavors to blend.

Serve each chilled serving over a bed of 1 1/2 cups fresh greens.
