Tuna pasta with a kick! Tuna pasta with a kick!
Number of Servings: 3

Ingredients

    3 Tb. Olive Oil
    I can Tuna
    5-6 Roma Tomatoes, chopped
    1/2 bell pepper, chopped
    1/2 c. Onion, chopped
    Crushed Red Pepper to taste (1-2 tsp)
    1/2 lb. pasta
    3 Tbs. Parm Cheese

Directions

Chop up all veggies. Start boiling water for pasta. On medium heat, add oil and crushed peppers into a skillet. Add onions. Cook until tender. Add one can of tuna, stir until hot. Add in bell peppers and tomatoes, cook until hot. When pasta is cooked, drain water, then pour contents of skillet onto the pasta. Stir until fully mixed. Top each serving with 1 Tb. of Parmesan cheese.

    This was absolutely fabulous, I was a bit worried when I was making it in th e skillet it wouldn't blend well together but it definitely did at the end. Note I didn't use as many tomatoes at it called for as I'm not a huge tomato fan. And Ill definitely be making this again for lunch, reheats great! - 1/23/13
