Introduction

This recipe is awesome for breakfast on the run. One batch can be divided and last you the whole week! This recipe is awesome for breakfast on the run. One batch can be divided and last you the whole week!

Ingredients

    5 Large Eggs
    1 10oz Package Frozen Spinach
    .75 - 1 Cup of Shredded Cheese (I use a Cheddar blend)
    .5 TSP Baking Powder

Directions

Preheat oven to 350. Spray cupcake pan (makes 12) with nonstick spray or use tinfoil liners. Thaw spinach and squeeze out as much water as possible. Place on paper towels and press out remaining water. In medium bowl beat together eggs and baking powder. Add cheese and spinach - mix well. Pour mixture into cupcake pan and bake 25-30 minutes. These are great hot or cold. You can even add more ingredients like peppers, onion, turkey sausage, etc. I put 2 quiches in a ziplock snack bag so they're ready to grab in the mornings. Enjoy!

    Just a tip: A quick way to dry out the spinach is to take a strong, clean dish towel put spinach inside, roll it up like a cigar and strain it out over the sink. Make sure to use a white towel you can bleach immediately or one you don't mind getting stained. - 4/7/10

    To cut down on the fat content I halved the full eggs and substituted egg whites. I used lower fat cheese and even split that 50/50 with non-fat cottage cheese. I didn't have any spinach so I steamed some broccoli and used that instead. I also added some grated onion for flavour. Awesome recipe!! - 5/16/10

    I made this and took a taste and it was a little bland. I agree with the submitter to add more ingredients. I used the paper muffin cups and found that the quiches stick badly so I won't use the muffin cups next time. I like the convenience of this recipe and will make again for sure!! - 11/1/09

    I loved this! I make crustless quiche a lot anyway, so to have an individual portion ready to grab for breakfast? Awesome! I add whatever I have around the house--ham, peas, mushrooms, etc. It's a great way to use up ingredients and eat healthy at the same time! - 12/9/09

    Awesome recipe. I made it for my family on Mother's day, 2012. They were a HIT!! I'll definitely be making this one again! Added mushrooms and subbed eggbeaters and Reduced fat mozzarella cheese to change nutritional values to 86Cal, 3Fat, 4Carb, 377Sodium, 80Chol, 2Fiber, 12 Protein. - 5/13/12

    A solid recipe that's really easy to make. I added in some cayenne pepper, frozen sliced mushrooms (thawed) and used that neat tip to drain the spinach with a towel before mixing it into the egg mixture. Will definitely make again! - 11/4/10

    This has become a household staple. We make them on the weekend so we have them for the whole week. We have added a twist by leaving out the spinach - adding corn, black beans, and Mexican spices with the cheese. - 10/7/10

    Very easy to fix and tasted great. I added an onion and some sausage. It does really stick to the muffin tins though, so go heavy on the no stick spray. - 12/5/09

    Healthy due to lots of spinach but bland, so next time I'll spice it up with garlic & black pepper. I like the basic recipe though, it's easy & fast, and a healthy make ahead breakfast to keep me out of the fast food drive thru. - 12/23/10

    I used a combination of eggs and egg beaters and added diced red peppers. My only complaint is the complete lack of any seasoning mentioned in the recipe. I added a little salt, pepper, and garlic powder and these were really good. With my modifications they are even lower in calories. - 1/6/13

    Have just made this for our main evening meal and thoroughly enjoyed it. Did add some onion to give it a bit more taste as others had recommended.     I made these this morning. I didn't have frozen spinach so used fresh. I sauteed some diced onion, 1/2 green pepper, 1 garlic clove & added the spinach until it wilted. I added t 1/4 tsp of salt and a sprinkle of Braggs seasoning. I used 6 Tbls of egg whites instead of 2 of the eggs. Delicious!! - 12/5/13

    This recipe would be much better if there were a little spice added to it. I put in some garlic powder, cayenne or cajun spice and a pinch of salt and pepper. If you don't like bland foods, add some spice. :)

    What's the general expiration time on these? I get that one batch as listed can serve for about a week, but how long can I keep them in the fridge?
