Introduction

I love Chili's Southwestern Eggrolls. They have so much tasty stuff in them, but I hate the fact they are deep fried. I added more beans and corn and then put them in the broiler for crunch.
These are great made ahead of time and *frozen for a quick meal or a fun snack for the big game. I make a double batch so I can freeze some for later.

Ingredients

    1 boneless, skinless chicken breast, pounded flat
    1 Tbsp extra virgin olive oil
    2 Tbsp chopped bell pepper (red or green)
    2 Tbsp chopped green onion
    2 Tbsp chopped fresh jalapeno pepper
    3/4 cup black beans, rinsed (1/2 of 15 oz can)
    3/4 cup whole kernel corn, rinsed (1/2 of 15 oz can)
    2 Tbsp chopped, frozen spinach
    1/4 tsp dried parsley
    1/2 tsp ground cumin
    1/2 tsp chili powder
    dash cayenne pepper
    salt to taste
    4 oz shredded Monterey Jack cheese (or Pepper Jack for a little extra kick)
    5 whole wheat tortillas, 8 inch
    1 medium avocado

Directions

Broil the chicken breast until the juices run clear. Set aside to cool.
In a large skillet, heat the olive oil. Add the bell pepper, green onion and jalapeno pepper. Saute a few minutes, until the vegetables are tender.
Shred the chicken breast. Add the chicken, black beans, corn, spinach and spices to the skillet and mix well. Cook for a few more minutes on low, stirring occasionally. Remove from heat and stir in cheese until melted.
Heat each tortilla and add 1/5 of the mixture. Fold the tortilla so it is completely closed. Place on a small cookie sheet folded side down. When all five are filled, put cookie sheet in the broiler and cook for 2-3 minutes on each side of the eggroll or until the tortilla is crispy and golden brown. Cut each eggroll diagonally and serve with mashed avocado.

You can dip in sour cream, salsa, or guacamole. Not included in nutritional values.

You can always adjust the spices to your taste.

*if made in advance and frozen for later, bake the eggroll 25 -30 minutes at 350 and then broil each side for a 2 - 3 minutes to get the crispy shell.

These can also be made with firm tofu instead of the chicken for a vegetarian meal, great both ways.

    Sugestions: Careful heating the tortillas or they may crack. Steam in micro between towels for few secs until soft. B4 broiling spray w/ cooking spray to help make them crispy. - 11/3/09

    I cut out the olive oil all together, use olive oil cooking spray. Instead of avacado, use picante sauce for dipping. Also, the cheese is not necessary or just use half. This will bring the calories and fat content down so you can eat two of these for lunch if wanted. - 1/8/10

    very good, next time, when we take the other batch from the freezer, I will spray the tortillas with cooking spray, on the outside before rolling, and then again on both sides before broiling. My 19 year old daughter loved them! - 1/3/10

    These are delish! I cut out the chicken, olive oil & avocados (chicken because I am vegetarian; olive oil because it doesn't really need it; and avocados because I can't stand them). This brought the total calories to 283. - 1/5/11

    Excellent! I just made these and loved them. I did modify it a bit. I'm allergic to bell pepper so I used green chiles instead (for convenience I used canned chiles and jalepenos). I also left off the cheese and they were still awesome. There is lots of room to improvise. Froze the leftovers too. - 1/9/10

    We loved this!! We don't like black beans, so I used pinto beans w/jalepenos, turned out very good and next time am thinking of using refried beans! Also added some salsa to the mix before loading the tortillas. BIG HIT!! - 6/9/10

    I actually MADE this recipe so I can give a real review, lol! It's great broiling the tortillas=tastes like its fried!(careful, too close & you might set off the alarm) I'm guessing my tortillas were smaller, because I made *8* egg rolls. Added some extra heat to get the capsaicin working. Gr8! - 2/14/10

    You can reduce the calorie count by using a low-carb tortilla. I use whole wheat, low-carb tortillas when making enchiladas that are 50 calories each. They aren't great with tacos, but they are really great with very flavorful dishes--like these southwestern "egg rolls." - 3/8/11
