Super easy, filling and delicious! Cooks up fast and the peanut butter lends a creamy and velvety texture. Super easy, filling and delicious! Cooks up fast and the peanut butter lends a creamy and velvety texture.
Number of Servings: 6

Ingredients

    1 cup basmati rice
    2 cups water
    1 Tbsp olive oil
    1/2 cup chopped onion
    3 cloves garlic, chopped
    2 cups water
    2 cups vegetable broth
    1 28 oz can crushed tomatoes
    1/2 cup natural peanut butter
    2 Tbsp balsamic vinegar
    1/2 tsp salt
    1/2 tsp crushed red pepper flakes
    1/4 tsp pepper

Directions

Cook rice in a medium sized pot with a pinch of salt.
Meanwhile, saute onion and garlic in olive oil over medium heat until soft, about 5-10 minutes.
Add water and stock, then whisk in peanut butter and crushed tomatoes. Stir in vinegar and spices.
Once rice is cooked, stir in one cup cooked rice into soup. Simmer 10 minutes more.
Serve with additional rice on top. You can also add chopped peanuts and or green onion.
