Ingredients

    3 C oatmeal
    1.5 C whole wheat flour
    3 sticks I Can't Believe It's Not Butter Light
    1/2 C splenda brown sugar
    1/4 C splenda for baking
    1/3 C egg whites
    1 tsp vanilla
    1 tsp baking soda
    1 tsp cinnamon
    1C walnuts
    1C raisins

Directions

Beat sugar and olea until smooth.
Add egg whites and vanilla.
Stir in flour, baking soda, cinnamon.
Stir in oats, raisins, and walnuts.
Place on non stick cookie sheet.
Bake at 350* for 10-12 minutes.

    Do you really use 3 sticks of the I Can't Believe Its Not Butter Light????? Seems like a lot. Do they come in a smaller stick than normal butter? - 5/13/09

    These are very good, I was impressed. The only problem is they were a bit crumbly. I think it's from the wheat flour, next time I might substitute half wheat flour, half white flour to see if it corrects that problem. But definitely a very yummy, sugar-free, "healthy" cookie! - 10/11/07
