Introduction

I've tried lots of tortilla recipes. I hated them. Too thick, too wheaty tasting. These are the best and they are fat free. Lucky find. I've tried lots of tortilla recipes. I hated them. Too thick, too wheaty tasting. These are the best and they are fat free. Lucky find.
Number of Servings: 24

Ingredients

    4 cups whole wheat flour
    1 tsp salt
    1/4 tsp baking powder
    1.5 cups boiling water

Directions

Put flour, salt, and baking powder into Kitchen-Aid mixer and mix, using the paddle blade. Pour boiling water over this and mix thorougly. Switch to dough hook and knead for 2 minutes. This helps the gluten in the flour develop and absorb the water. Shape into 24 balls and let rest 20 minutes. Heat a cast-iron griddle or non-stick pan to medium high heat. Roll out on an unfloured, ungreased countertop. I roll mine into squares. Roll as thin as you can and stretch the dough when you pick it up to place it on your hot griddle. Cook on both sides. Slip the hot tortilla into a zip-lock bag and zip it up. Keep doing this. The trapped steam keeps the tortillas soft. If you want to freeze these, let the bag cool and then place it in the freezer.

    These are really fantastic, with a nice, light texture and great flavor. My husband usually prefers white flour tortillas, but he loved these, and so did I! I don't have a KitchenAid, but any mixer with dough hooks will do. Just be careful if you use a glass mixing bowl when adding boiling water! - 4/23/10

    I too have been searching for a good tortilla recipe. This one is great! Low cal, all good-for-you ingredients (and you get a little work out rolling them out!) My 10 yr old son loves to help me make these, he mans the electric griddle and I do the rolling. Made the recipe as-is and loved it! - 3/12/10

    These are very good! I used Hodgson Mill Graham whole wheat flour which is a bit more grainy than regular whole wheat flour so I found I needed about 1/2 cup extra of water to get the dough to the right consistency. Great low call healthy tortilla recipe! Definitely will make again. - 8/16/10

    Could stand quite a bit more water in the dough. Dough was dry (I even added 1/2 cup more water) and shells were tough. I had trouble rolling them out too. Good try though. - 1/21/16

    Some individuals may be genetically predisposed to tortillas. Whether or not they actually experience negative consequences will depend upon their immediate social and physical surroundings, I can't stop eating tortillas when I start. I had find to a low cal recipe. Thanks you saved me. - 3/3/11
