Number of Servings: 24

Ingredients

    1 C. all purpose flour
    1 1/2 C. whole wheat flour
    1/4 C. cocoa powder
    1 1/2 tsp. baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1 1/2 splenda
    1/4 C. vegetable oil
    3/4 C. unsweetened apple sauce
    3 eggs
    2 tsp vanilla
    2 C. grated zucchini

Directions

Preheat oven to 350 degrees. Spray and flour 2 loaf pans.

In a large bowl, beat together sugar, egg, applesauce, oil and vanill. Stir in zucchini.

Add flour, cocoa, baking powder, baking soda, cinnamon. Stir until just moistened.

Bake for 50 minutes to 1 hour or until toothpick comes out clean. Cool in pans for 5 minutes. Remove from pans and let cool. Cut each loaf into 12 slices.

    Very Good
    I made this and love it. Used only 1 Cup of Splenda, I did not have apple sauce, used 3/4 Cup 1% Chocolate milk instead and I add 1 cup of frozen blueberries. I baked it in only one loaf pan. I calculate 20 portions... I will def make this again. - 8/6/11

    All my loaf pans are large 9 x 5 so I made one large loaf, it took 90 mins to cook. Loaf is moist but found it to be lacking in taste. Next time I would add walnuts and perhaps less cocoa, I used 1/2 cup. Maybe chocolate chips sprinkled on top of the loaf would give it more zip. - 8/15/09

    HELP!! While the directions instruct to add cocoa, the ingredient list doesn't list cocoa. How much is used. - 8/13/08
