Ingredients

    1 box (16oz) Fettucini
    1 cup frozen spinach
    1 can diced tomatoes (15 oz)
    1 clove garlic, minced
    1 tbsp olive oil
    1 tbsp flour
    1 tsp each salt and pepper
    1 tbsp each oregano and basil
    8 tbsp shredded parmesan cheese


Directions

Boil pasta according to directions on box - set aside.

In a 3 quart sauce pan over med heat add olive oil, heat for 2 minutes, then sautee garlic until light brown (do not burnn) add flour, and mix well cooking until bubbly. Add tomatoes (liquid and all) and cook until boiling, add spinach, and all seasoning, cook, stiring ocassionally until bubbly. Add pasta, mix together thouroghly...serve with 2 tablespoons of shredded parmesan cheese.

Makes 8, 2 oz sides, or 4, 4 oz meals

    Parmesan cheese is not vegan - 12/8/09

    The recipes says to omit the parm for vegan recipe.

    It tastes JUST as good without it. I'm vegan, but the rest of my household is not.

    WOW!~ I made with fresh tomatoe and fresh spinach and it was so delish we ate the whole thing. The flour really gave it a nice thick texture. I almost skipped that part, but am glad I didn't. - 2/23/10

    Incredible!
    While cooking this I thought: if this tastes as good as it looks and smells I'll be in love. It does! It was delicous! I didn't add the flour, and added some fresh tomato on top of the canned. Also, I used only 8 oz. of pasta instead of 16. We will definitly be having this again!! Thanks! - 7/7/09
