Introduction

An easy, fast, and lower fat version of this restaurant favorite. An easy, fast, and lower fat version of this restaurant favorite.

Ingredients

    • 1 1/2 lbs. lean ground beef
    • 1 package taco seasoning
    • 1 1/2 cup water
    • 2 cups romaine lettuce, shredded
    • 1 large tomato, diced
    • 1 cup shredded reduced fat sharp cheddar cheese (or cheese of choice)
    • 1- 6 oz. package corn chips

Directions

1. In skillet, brown ground beef and drain grease. Mix in water and taco seasoning and simmer, uncovered, until you have desired consistency.



2. Make bed of corn chips on plate, and place meat on top. Cover with tomatoes, lettuce and cheese, and serve.



Makes 5 servings.

    I rinsed the beef after draining the grease from it before adding the taco packet and lowered the fat content. I have also made it with just chili powder, cumin and a can of rotella and it turned fine. Iwas able to lower the sodium content for myself. Husband loved it. - 4/20/09

    I have been making this recipe for years as I don't like the mess of east regular Tacos. I use crumbled up taco shells, less fat than chips. I add , onions and black olives, no fat refried beans or kidney beans, and no fat sour cream. It then ibecomes a complete mea that we all love. - 4/25/08

    I make this with ground turkey add more veggies, what ever your preference is and use the whole wheat low carb tortillas to make my own chips. come on people instead of beating up the recipe change it, or just don't make it. sorry if that seems harsh, but some of the comments are harsh. - 4/20/09

    ok here it is on weight watchers here salad is 11 points per serving I revised w/ turkey, and baked tortilla chips and eliminated the seasoning packet and put 1 tbsp chili powder and 1 tbsp paprika which made the receipe go down to 7 points.. per serving. I did not add sour cream.. - 4/20/08

    This is basically the same recipe I always use. It is very good. But I wouldn't tout it as lower fat. I'm going to rate it as a recipe should be rated - on taste.. Some people out there are not trying to lose weight. It is a very yummy way to have tacos. This recipe is over 1/4lb of beef per peson - 4/21/09

    an interesting way to make a favorite taco salad. Lots of lettuce. Chopped up raw red peppers, so yummy, lean ground turkey, onions, taco seasoning or make ur own w/less sodium like some1 suggested, skip the chips, add a low fat delicious alt. 4 sour cream, a small bit of nonflavored greek yogurt :) - 4/20/09

    Similiar to my recipe, but with the leanest ground beef or ground turkey. Draining the beef with hot water gets some of the grease out. I add whatever veggies I want whenever it is prepared, good but I consider it a treat, not for everyday. - 4/26/09

    I made this with some changes to cut the fat by tons and calories! I cooked up chopped onions and mushrooms with Morning Stars crumbles with a tiny bit of olive oil. I also used multigrain tortila chips just for dip/scoop purposes, but mostly had on a bed of lettuce. Was very good & good for me!! - 4/15/08

    This was great. Ground chicken instead of beef. Baby spinach leaves and spring mesculin mix instead of romaine lettuce. I use taco seasoning by Victorian Epicure, so it is all natural, and has WAY less salt. use marbled cheddar, and homemade salsa. Very yummy, and WAY less fat, salt, and calorie - 4/10/08

    Thsi was great. I used low sodium taco seasoning, and added pinto beans for protein & fiber. I also had multi-grain tortilla chips by Garden of Eatin which I really recommend. - 1/28/08

    While it may be not appear to be diet food, I still make it on occassion. It's filling and satisfying as a meal. I like to add a heaping tablespoon of sour cream. For me, this is comfort food AND a lot healthier than french fries or other fried foods. - 10/17/07

    I would go with ground turkey instead to save on some of that fat for sure and maybe some low sodium taco seasoning but it does sound good. Oh and dont forget the fat free cheese and this could be much healthier. The fat forthis one meal is more then half of my daily max. - 4/22/09

    I THINK THAT THE CARBS AND FAT READINGS ARE REVERSED THERE IS NO WAY THERE CAN ONLY BE 4.5 CARBS WHEN ONE OUNCE OF CORN CHIPS HAS 16 CARBS AND THIS RECIPE CALLS FOR 6 OUNCES - 4/21/09

    I don't see how this could be labed "lower fat" when it has 35.4 grams of fat per serving, not to mention the 545 calories. All the ideas on lowering fat are great, but then wouldn't it be a whole difference recipe that should be listed instead? - 4/21/09

    We've been making this for years; however, we use 98% fat free hamburg, add onions, black olives, cherry tomatoes and definitely FAT FREE cheese. We also use a Taco Seasoning packet made by Ortega. I put mine in a bowl while the meat is warm, shake it up and serve it. Great quick meal! - 4/20/09

    yes it sounds good(i love taco salad) But don't u think it would be better with chicken breast instead of beef way less fat and calories and use baked tortilla chips instead of regular ones....there is always ways to eat what u like just with lower fat and calories - 4/20/09

    I've been making this for years. I use ground turkey, add onions when cooking. We also use doritos to kick it up some times. Try using theses add ons to mix things up non fat sour cream, home salsa, green onions, mexican white cheese, hot sauce and beans. - 4/20/09

    Why not cook a yellow onion, a diced green pepper and 2 cloves of garlic in with the meat. I also use lean ground turkey instead. My version is much more flavorful, and heart healthy. I also add a tsp. of cumin. - 10/20/08

    My first thought was great a taco salad recipe. As I looked at the ingredients and calories, I had second thought about making this....I will give it a try but I will use ground turkey, my own spices, and baked taco chips. - 4/20/08

    This is making me hungry. It is VERY high in fat. Could wash the beef with water after cooking or use ground turkey. Could cut the amount of meat and add more lettuse or tomatoes. There is always ways to cut the recipes we enjoy. I plan on trying this one. - 4/10/08

    You could use ground chicken or turkey and leave out the taco season. Instead use some ground cumin and a little bit of chilli seasoning. Onions. Instead of the corn chips you could use baked tortilla chips instead. That would greatly cut down on everything. - 4/10/08

    I make a taco salad like this but I add refried beans to hamburger and about 0.5 cup water,for a taco bowl I take a whole wheat shell and a empty can and form it around it and bake it at 350 for 10-15 min until cripsy so good - 10/23/07

    Put browned meat in strainer and pour boiling water over (pan too) to help remove fat. Replace chips with whole wheat tortillas. - 10/19/07

    When I try this, I'll either bake corn tortillas that have been sprayed with canola oil, or cut that out entirely and put the meat mixture on a bed of lettuce. I'd also add some nonfat sour cream. - 10/17/07

    Instead of ground beef, I used ground turkey and really no difference in taste, at least for me....I use a lot of turkey and chicken, but then my husband and I are really not beef eaters...pork occasionaly....tahnk's for your recipe.. - 10/17/07
