Ingredients

    1 cup fresh mushrooms, sliced
    1 cup zucchini, sliced
    1 sweet onion, sliced thin
    1/2 tsp. ground thyme
    1/2 tsp. paprika
    1 tsp. minced garlic
    1 tbsp. butter
    1 roma tomato, chopped

Directions

Melt butter.
Add all ingredients, except for the tomato; saute until tender.
Add tomato and cook for 1 minute.
Serve plain or sprinkle with parmesan cheese.

    This is my favorite side dish. Used olive oil and doubled the tomatos. Had some fresh basil so added it to. I used chicken stock because the pan seems dry. - 1/6/16

    This is quick when using presliced mushrooms. I substituted olive oil for the butter and used more garlic (DH is Italian & loves garlic) - 7/6/10

    This was really good! Super easy and quick, and the paprika added an interesting flavor. I didn't add tomatoes because my husband and I don't like them, but it was great with just onions, zucchini, and mushrooms. I served this as a side dish to a mushroom chicken dish and it was a perfect meal! - 2/13/09

    This recipe was easy, and, perhaps too simple. I added penne pasta, Italian sausage + spaghetti sauce for a full entree...probably moving it away from the healthy side. My hubby + toddler both devoured it! - 10/10/08

    I do something similar to this except I use yellow squash, zucchini, celery, onion and mushrooms, thyme, salt and pepper. Cover for 10 minutes, add quartered tomatoes and parmesan, cover again for two minutes until the cheese melts. People who hate squash and zucchini love this recipe! - 10/9/08

    Wonderful! I added basil, oregano, rosemary, & black pepper & sauteed in olive oil...though butter gives a richer taste. So quick and easy. You could also add carrots, celery, spinach, & potatoes for even greater variety. & the tomatoes are the crowning flavor in this, so don't leave them out! - 10/9/08

    I make this for breakfast often, after the veggies are cooked, I put an egg in the middle, turn it when it's done on one side, top it with spinach and parmesian cheese and cook till spinach done (a minute or two). I love it. Oh, I use a tsp of olive oil instead of butter. - 10/9/08
