Ingredients

2 cans black beans (I use Trader Joe's Cuban black beans), 1 jar salsa or 1 can of diced tomatoes, 1 pork tenderloin roast, salt and pepper to taste, garlic, 1 medium finely chopped onion.
Directions
Salt and pepper roast to taste (generously).
(Optional) - insert small pieces of peeled garlic throughout the roast.
Brown roast in cooking spray or 1 TBSP of olive oil.
Add beans, tomatoes/salsa, pork and onion to crockpot.
Cook on low for 8 hours.
(Optional) squeeze fresh lime juice over sliced pork.
Makes about 10 servings for a 2.25 lb roast.

I started too late in the day to use my slow cooker so I made this in a dutch oven on top of the stove. I also used what I had on hand......two cans of low fat refried black beans and Trader Joe's peach salsa. I sauteed the onion after browning the pork. Yummy and just a hint of sweetness. - 7/23/10

I agree with you. I forgot to say in the instructions that I usually take out the roast and then drain the beans and tomatoes in a colander. I can't figure out how to change the recipe now, though. Sometimes I also use 3 cans of black beans, and this helps a little too.

I added a total of 3 cans of black beans drained and rinsed, to cut back on the sodium, 1 cn. of Green Chilies, and 1 can of Tomatoes (oregano, Basil, Garlic) along with the jar of salsa...served as burritos with shredded lettuce inside! It gave it a little more flavor with a Tex-Mex taste! Thanks - 8/3/10
