Introduction

My family loves Chicken Cordon Blue, but I just couldn't bring myself to make the orginial (it's way to high in fat). So, I set out to make it so that we all could enjoy it with no guilt. Ingredients

    1 1/2 lbs boneless, skinless Chicken Breasts (about 4 breasts at 6 oz. each.)
    4 slices 2%milk Swiss Cheese ( cut in 1/2 length ways)
    8 slices Canadian Bacon (cut in half)
    1 package Shake 'n Bake Parmesan Crusted flavor
    water
    cooking spray

Directions

Preheat oven to 400* F.

Take the chicken breasts and cut lengh ways into 2 thin cutlets. Pound the chicken slices to about 1/4' thick, set aside.

Line a baking sheet with, parchment, foil, or a silpat.
Place the packet of Shake 'n Bake into a pie plate, set aside.
Put some water (about 1 cup will do) into a seperate pie plate, set aside.

Take the chicken breast pieces and lay them out; put 1 of the1/2 slice of the cheese on the chicken, Then place 2 of the 1/2 pieces of canadian bacon lengh ways on to the cheese.
Now, take and roll each piece along the width. Place aside until you finish all 8 pieces.

Next line up the water, the shake 'n bake and the baking sheet onto counter. Now take each roll dip into the water and then into the shake 'n bake. Place roll onto baking sheet seam side down. After all rolls are coated, spray lightly with cooking spray on all sides.

Bake for 30 mins. or until the chicken is no longer pink.

2 rolls are 1 serving.

    I eat gluten free and on a budget so I made some slight modifications. For the gluten free I used oats. I threw them in a coffee grinder to get them into a powder. Second, I used ham because I already had it in the fridge. All in all it was the same concept and really good!!! Thanks for the idea. - 6/13/19

    These are GREAT!!!! Instead of dipping the chicken in water i seasoned them with garlic salt and dipped them in 2 tblspn of nonfat greek yogurt and a little water the crumbs stick better it was sooooooooo good!!!! I also added jalapenos cus i love spicy!!!!! - 11/8/11

    This was very good! I used bread crumbs with shredded parmesan cheese in it as I didn't have the shake n bake...didn't dip in water either. My teenagers loved it! - 1/26/11
