Ingredients

    2 1/2 c. brown rice flour
    2/3 c. cornstarch
    2/3 c. dry milk
    1 T. Xanthan Gum
    1 tsp. salt

    1 3/4 c. warm water
    1 pkt Active Dry Yeast
    2 T. Veg oil
    2 Large Eggs

Directions

Use warm, not hot water. In a small mixing bowl, combine water and yeast. Stir to combine.

In a medium bowl, whisk together dry ingredients. Add yeast mixture, oil and eggs. Using mixer, mix on medium for 5 minutes.

Lightly grease 9x5 inch pan with spray. Spread batter evenly into pan.

Lightly grease plastic wrap and cover the pan. Allow dough to rise for 1 hour. Preheat oven to 350.

Bake dough for 55 minutes or until internal temp is 208 - 211 degrees.

Remove bread from pan and cool on wire rack to avoid sogginess.

12 slices.
