Ingredients

    1/2 Bag of Frozen Stir Fry Veggies
    6 oz. Raw Shrimp, Peeled/Deveined and tails removed
    Pam Cooking Spray
    2 cloves of Minced Garlic
    1/4 C. Teriyaki Sauce
    1/4 C. La Choy Sweet & Sour Sauce
    2 Tbsp. Reduced Fat Peanut Butter
    1/4 C. Peanuts
    1/2 Tsp. Lemon Juice
    Salt & Pepper
    2 Green Onion Stalks, Chopped
    minced onion flakes
    Red Pepper Flakes, to taste

Directions

Makes 4 Servings

Spray the pan w/ cooking spray and warm to medium-high. Add veggies (lightly salt and pepper) and cook until brightly colored then add shrimp and saute w/ veggies adding minced garlic, lemon juice and onion flakes until garlic becomes fragrant. Then add crushed red pepper flakes and teriyaki sauce and cook until shrimp is pink and cooked through. Lower heat to simmer and add sweet and sour sauce and stir into veggies and shrimp. Sauce will begin to thicken. Stir in peanut butter and peanuts. When sauce has thickened top w/ green onions and serve over brown rice or noodles (noodles and rice not included in nutritional value).
