Ingredients

    4 cloves garlic, minced
    2 tsp extra virgin olive oil
    1 10oz package of baby spinach
    1 lb bay scallops
    1 tbsp basil
    1tbsp parsley
    1 15 oz can diced tomatoes
    1/2 cup parmesan cheese-grated
    1 tsp black pepper
    1/2 cup low fat mozzarella cheese-shredded

Directions

Makes 4 Servings

**In large skillet saute garlic in 1 tsp of olive oil over medium heat

**When garlic is brown-add spinach and saute until soft.

**Remove spinach and drain in colander.

** Season scallops with basil and parsley

**Add 1tsp olive oil to skillet and saute scallops.

**Add diced tomatoes and simmer 3 minutes

**Stir spinach back into skillet until heated through.

**Add parmesan, pepper and mozzeralla cheese.

**Heat throug until cheese melts

    Use 1 15oz can of diced tomatoes. I updated the recipe to include in the list of ingredients. Thx and enjoy-it is really good. Even my kids love it.
