Introduction

Ingredients

    1 cup whole wheat flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1 cup oats
    1/2 cup raisins
    1 egg
    1/4 cup unsweetened applesauce
    1/3 cup brown sugar
    1 cup mashed ripe banans
    1 tsp vanilla

Directions

Makes 12 muffins - grease muffin tin and preheat oven to 400 degrees F.

1. In small bowl, combine flour, baking powder, baking soda and cinnamon.
2. In a larger bowl, combine egg, applesauce, mashed banana, vanilla and brown sugar. Stir well.
3. Add flour mixture to liquids and stir enough to moisten; add oats and raisins.
4. Pour into prepared muffin tin. Bake for 20-25 minutes.

    I didn' use raisins, vanilla, and subbed brown for whie sugar (it's what I had)

    This was an easy quick, and pretty healthy recipe. I would lke to make them again and try raw sugar, vanilla, nutmeg, raisins, and walnuts.

    I'm not much of a muffin person but these are great! I put in 1/4 of walnuts instead of the raisins. Next time I think I will add a little more cinnamon, and bananas and try a little nutmeg as well. - 4/20/08

    yummy! I substituted egg beaters for the egg, and Splenda brown sugar blend for the brown sugar, which knocked the calories down to 141, and they were still delicious! - 4/19/08

    I added chopped walnuts, nutmeg, and a little more applesauce since the batter looked a little dense. They were a little bland. Next time I'm going to try 1/2 cup brown sugar and see if that adds a little more flavor. They're still pretty good. - 8/22/12

    Too bland and the texture wasn't right, very dense and gummy. I'm assuming this is due to using the applesauce in baking but maybe I didn't do something right? Either way I think I'll look for another recipe. - 7/27/11

    I didn't have raisins so skipped that and I ate it the next day and it was chewy and tasteless. My hubby thinks it's because I put it in the fridge. Even after microwaving, it wasn't good. I will try this again without refridgerating and see if it's ok. - 1/12/10

    I made these yesterday with a few additions. One trick is to use fat free yogurt instead of (or in addition to) the applesauce and add the baking soda. Let stand 5-10 minutes. The baking soda and yogurt react together and rise. Add the mixture to the rest of the batter. - 10/12/09

    These were great! I added a little extra cinnamon and some nutmeg and allspice. Made 16 muffins for me. My daughter had 2 for snack that afternoon. Best recipe I've made so far with wheat flour (which takes a little getting used to!!) - 6/25/09

    Nice flavour and texture. I liked these and will definately make them again. My son who's a junky even liked them. I substituted 2 eggwhites for the egg and next time I think I will reduce the sugar and add some milk.
