Ingredients

    1 Joseph's Pita Pocket Bread
    2 fresh eggs
    butter spray (like I Can't Believe It's Not Butter)

    *Note: According the Oat Bran & Stone Ground Whole Wheat Flour Pita Bread package, the fiber content is 5 grams per serviing (one pita bread), so this should show 2.5 grams of fiber per serviing (one bread sliced in half). serving). **Another great carb alternative are the Trader Joe's Reduced Carb Whole Wheat Flour Tortillas (45 calories and 7 grams of fiber) Wow! They taste good too.

Directions

Split the Joseph's pita bread lengthwise and put both halves on aluminum foil; then spray bread with butter spray. Crack open an egg into each pita half open-face; spray a bit of butter spray over egg and bake in convection oven at 350 degrees for 8 minutes; just watch so they do not burn. Serves two. So enjoy with a friend!

    I used egg beaters, it came out soo good and the bread was just a little crunchy, it hit the breakfast spot. - 3/7/10

    So glad you liked this recipe...I try to make it several times a week as it is a tasty, easy and healthy breakfast option! You can even gently fold it over when it is done to make it like a pocket sandwich. Enjoy!
