Ingredients

    3 sun-dried tomatos

    1 can tuna in water, drained
    1 celery stalk, chopped
    1/4 sweet onion, chopped
    1 carrot, shredded
    1/3 cup fennel, chopped
    3 tablespoons fresh dill, chopped
    1 1/2 tablespoons chopped fresh parsley
    1 tablespoon fresh lemon juice
    3 dashes tobasco
    1/2 teaspoon black pepper

    1 1/2 tablespoons light mayonnaise
    1 1/2 tablespoons low fat plain yoghurt
    1 1/2 tablespoons dijon mustard

    1 dash salt

Directions

Reconstitute the sun-dried tomatoes for 3 minutes in 1 cup hot water, Dry on paper towels and chop. Combine the tomatoes with the next 10 ingredients (through pepper) in a medium bowl.

Combine the mayonnaise, yoghurt and dijon mustard in a small bowl and pour over the tuna mixture; stir. Add salt to taste.

Serve the tuna in pita, on bread or over mixed greens.
