Ingredients

    Combine:

    One head Romaine Lettuce, shredded
    One English Cucumber, chopped (1/2" dice)
    3/4 cup Grape Tomatoes
    1/3 cup Kalamata Olives, pitted
    1/4 cup Feta Cheese, crumbled
    1/4 cup Light Italian Dressing
    9 oz Grilled Chicken Breast, sliced

Directions

Toss all ingredients (save chicken) in a medium salad bowl. Lay chicken strips on top. Serve!

Makes 3 meal-sized servings (or one-third for me and two-thirds for my husband!)

I use Newman's Own Lighten Up Dressing, and the Costco Kirkland brand Chicken Breast Strips. (This is why the cooking time varies. Allow longer if you're grilling the chicken yourself. :-)

I'm sure the calories would be lower with lowfat feta, but my DH won't eat the lowfat stuff. It's still a great recipe!
